Location: Naval Base Kitsap Bremerton - Puget Sound Naval Shipyard & IMF

Pay Grade: NL-7404-04

Introduction: This position is located in the Food and Beverage Division of the Civilian Morale, Welfare, and Recreation Department of Employee Food Services, Puget Sound Naval Shipyard and IMF.  The primary purpose of this position is to ensure food service staff is trained and ready to prepare food items ensuring timely preparation while conforming to sanitation and safety standards.

Major Duties and Responsibilities: As a leader the incumbent is responsible for passing on to cooks, cook helpers, food service workers and wait staff instructions received from supervisor.  Sets the pace for accomplishing duties as a working cook.  Assists in the training of new employees, ensuring staff is ready for work and has the proper equipment and supplies.  Prepares, cooks and seasons a full variety of quantity cooking in accordance with recipes ranging from those which are new or complex and which include but are not limited to meats, poultry, seafood, vegetables, sauces and gravies.  Plans and coordinates a variety of steps to ensure that items are ready for serving in a timely manner.  Adjusts recipes according to designated number of servings needed.  Ensures compliance with portion control standards.  Is able to judge whether raw materials are fresh or appropriate for use, determines acceptability of final product as to color, consistency, temperature, odor and taste. Prepares dishes that require a high level of cooking skill.

Qualifications:

  • One year or related cooking experience in a restaurant setting.
  • Skill in planning, coordinating and time sequences to have items ready to serve.
  • Ability to adjust recipes.
  • Knowledge of the characteristics of various raw and cooked foods to assure items are fresh and to judge final product by color, consistency, temperature, odor and taste.
  • Knowledge of cooking equipment and utensils. Ability to follow oral and written instructions. Ability to lead and train.

Conditions of Employment: Successful completion of National Agency (NACI) background check is required.

Working Conditions: Long periods of time on your feet. Frequent lifting, bending, twisting, squatting and reaching. Ability to lift up to 40 pounds as needed.
